According to Dennis, if you want the BEST Alfredo you will have to go to The Garland House in Brockport, NY. Once you try this recipe, you’ll have to be the judge.
THE GARLAND HOUSE’S ALFREDO
Serves 4-6
3c.half and half 1 stick butter
1/4 c. white wine 1 tsp.garlic
1/2 tsp. nutmeg 1/2 tsp. cayenne pepper
1-11/2 tsp. granular chicken base or bouillon 1 c. asiago cheese
1 c. parmesan cheese 1-11/2 c. water
pasta cooked
Combine the half and half, butter, wine, garlic, nutmeg, cayenne pepper and chicken base. Heat slowly until butter is melted. Add cheese and water alternately; 1/2 cup of the parmesan and then 1/2 cup of the asiago, making sure to incorporate the cheese fully into the mix. Add 3/4 cup of water. (Avoid overheating and breaking the sauce by not giving in to the urge to turn up the heat and add all the ingredients at once for a slightly faster preparation.)
Add the remaining 1/2 cup of each of the cheeses. Stir into the sauce, allowing it to reach an even consistency when fully incorporated, then add the other 3/4 cup of water. Make sure the cheese fully melts into the sauce. After all the ingredients are mixed, allow to simmer (ON AS LOW A TEMPERATURE AS POSSIBLE WITH FREQUENT STIRRING) for 5 minutes.
Serve over fettucine or your favorite pasta.
